New Mexican Green Chile Apple Crisp

Inspired by the green chile apple pie made famous in New Mexico, this adventurous dessert combines the sweetness of apples and ground cinnamon with the flavorful warmth of green chiles to elevate an American classic.

Ingredients
  

  • 8 apples, peeled and cubed (Gala, Fuji, Honeycrisp, or Golden Delicious)
  • 2 tbsp lemon juice (juice from about 1 lemon)
  • 1/3 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1/4 cup green chiles, roasted and chopped (either fresh or canned)
  • 8 tbsp butter, grated
  • 3/4 cup all-purpose flour
  • 3/4 cup old fashioned oats
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1/2 cup sharp cheddar cheese, shredded

Instructions
 

  • Preheat oven to 350 F degrees. Butter an 8×8 baking dish. Set aside
  • In a mixing bowl, add apples, lemon juice, granulated sugar, cornstarch, ground cinnamon, and green chiles. Stir to combine, then transfer to the prepared baking dish.
  • In a separate mixing bowl, combine butter, flour, brown sugar, oats, and salt. Using a wooden spoon, or clean hands, mix until well combined. Fold in the cheddar cheese.
  • Crumble the topping over the apples in the baking dish.
  • Bake 45-55 minutes, until topping is golden brown and apples are fork tender.
  • Serve warm with a scoop of vanilla ice cream.

Notes

  • Green chiles can vary in their heat intensity. You can easily adapt this recipe to suit your taste. Use more green chiles if they’re mild and less if they’re hot.

  • Prior to baking, the apples and topping will be mounded significantly in the baking dish, but will bake down.
  • I would recommend placing a baking sheet under the baking dish to catch any drips that may bubble over.
